City Guide: Paris
6036
A tiny utilitarian space with an inventive small plates tasting menu meant to be shared.
Chef Haruka Casters cut her culinary teeth at great Paris restaurants including Abri and Saturne. Her beautiful preparations are great value for such an innovative menu that blends Japanese ingredients and precision with French produce and technique. The butternut soup and heirloom topinambour (Jerusalem artichoke) salad are recurring favorites, but everything on the menu that changes daily is good–and diners will want to sample a bit of everything. Dinner seatings are at 7:30 p.m. and 9:30 p.m., so arrive on time for the first seating or you’ll have less time to linger over the delicate flavor compositions and beautiful plating. And “6036”? That’s the number of kilometers separating Paris and Casters’ native Tokyo.
